Prepare the Cheese
Grate the Chihuahua cheese using a box grater or food processor. Set aside.

Prepare Salsa Fresca
In a bowl, mix diced tomatoes, chopped onions, chopped cilantro, lime juice, and salt to taste to create a fresh salsa. Set aside.

Assemble the Quesadilla
On a clean surface, place one flour tortilla. Spread half of the Chihuahua cheese evenly over the tortilla. Add half of the mashed avocado on top of the cheese. Spoon half of the salsa fresca over the avocado. Top with another layer of Chihuahua cheese and finish with the second tortilla.

Cook the Quesadilla
Heat a non-stick skillet over medium heat. Once hot, carefully place the assembled quesadilla in the skillet. Cook for about 3-4 minutes on one side until golden brown and crispy. Carefully flip the quesadilla and cook for an additional 3-4 minutes until the other side is also golden brown and the cheese is melted.

Serve
Once cooked, remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with crema, salsa verde, and your choice of side: refried beans, Mexican rice, or guacamole.
