Potato Chips

Method

Preparation

  1. 1

    Wash and Slice the Potatoes

Thoroughly wash the Russet potatoes under cold water to remove any dirt. Using a sharp knife or a mandoline slicer, slice the potatoes into thin rounds, about 1/16-inch thick.

  2. 2

    Soak the Potato Slices

Place the sliced potatoes in a large bowl of cold water for at least 30 minutes. This helps remove excess starch and results in crispier chips.

Frying

  1. 3

    Heat the Oil

In a large, deep pot, pour in the vegetable oil and heat it to 350°F (175°C) over medium-high heat. Use a thermometer for accurate temperature.

  2. 4

    Dry the Potato Slices

After soaking, drain the potato slices and pat them dry with a clean kitchen towel or paper towels to remove excess moisture.

  3. 5

    Fry the Chips

Carefully add a few potato slices to the hot oil, making sure not to overcrowd the pot. Fry until the chips turn golden brown and crispy, about 3-4 minutes. Use a slotted spoon to remove the chips and transfer them to a plate lined with paper towels.

  4. 6

    Season the Chips

While the chips are still hot, sprinkle them with salt, paprika, and garlic powder to taste. Toss gently to coat evenly.

Serving

  1. 7

    Serve the Chips

Once all of the chips are fried and seasoned, serve them warm as a crunchy side to your favorite sub or on their own as a snack.
