Cook the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until soft and translucent, about 5 minutes.

Add Black Beans
Add the canned black beans (drained and rinsed) to the skillet. Mash the beans with a potato masher until you reach your desired consistency, then cook for about 5-7 minutes, stirring occasionally.

Prepare the Toppings
While the beans are cooking, crumble the cotija cheese in a bowl and set aside. Also, have the salsa roja ready for serving.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Tortilla Chips
Cut the corn tortillas into quarters. Once the oil is hot, fry the tortilla pieces in batches until they are golden and crispy, about 2-3 minutes per batch. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Serve the Dip
In a serving dish, layer the refried black beans at the bottom, then top with crumbled cotija cheese and salsa roja. Serve warm with crispy fried tortilla chips on the side.
