Refried Black Beans

1. Cook the Aromatics

In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until soft and translucent, about 5 minutes.

2. Add Garlic and Spices

Stir in the minced garlic and cook for an additional minute until fragrant. Then add the cumin, salt, and black pepper, stirring to combine.

3. Add Black Beans

Add the canned black beans (drained and rinsed) to the skillet. Mash the beans with a potato masher until you reach your desired consistency, then cook for about 5-7 minutes, stirring occasionally.

While the beans are cooking, crumble the cotija cheese in a bowl and set aside. Also, have the salsa roja ready for serving.
