Prepare the Sweet Potato
Preheat the oven to 400°F (200°C). Peel and cut the sweet potato into small cubes. Place on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat evenly. Roast for 25-30 minutes until tender.

Prepare and Roast the Veggies
Chop the bell pepper, zucchini, and red onion into bite-sized pieces. On a separate baking sheet, combine the vegetables with 2 tablespoons of olive oil, 1 tsp salt, and 1 tsp black pepper. Toss to coat and roast in the oven at 400°F (200°C) for 20-25 minutes until caramelized and tender.
Making Refried Black Beans

Cook the Black Beans
In a small saucepan, heat 1 tablespoon of olive oil over medium heat. Add the canned black beans (drained and rinsed), garlic powder, and cumin. Cook for about 5-7 minutes, mashing slightly with a fork until heated through and slightly refried.

Assemble the Power Play Bowl
In a large serving bowl, layer the cooked quinoa, roasted sweet potato, roasted veggies, and refried black beans. Top with salsa fresca, chopped romaine, shredded red cabbage, and diced avocado. Drizzle with salsa roja and avocado lime dressing before serving.
