Chicken Preparation

    Marinate the Chicken

    In a bowl, combine the chicken thighs, adobo seasoning, olive oil, and salt. Mix well to ensure the chicken is evenly coated. Cover and refrigerate for at least 30 minutes.

    Cook the Chicken

    Heat a grill or skillet over medium-high heat. Cook the marinated chicken thighs for about 6-7 minutes on each side or until fully cooked and crispy. Remove from heat and let rest before slicing.

Salsa Preparation

    Make Habanero Salsa

    In a bowl, mix together the diced habanero peppers, diced tomato, red onion, lime juice, and cilantro. Season with salt to taste. Set aside.

Onions and Slaw Preparation

    Marinate the Onions

    In a small bowl, combine the thinly sliced red onion and lime juice. Let it marinate for about 10 minutes.

    Prepare the Slaw

    In a large bowl, toss together the chopped cilantro, sliced radishes, shredded cabbage, olive oil, and salt. Add the marinated onions and mix well.

Assembly

    Assemble the Sandwich

    Spread Duke's mayo on the bottom half of each toasted sandwich bun. Layer with sliced chicken, a generous scoop of habanero salsa, and the cilantro and radish slaw. Top with crispy tortilla strips and place the top half of the bun over the filling.
