Popcorn Chicken

Adobo Dry Rub or Cholula Butter

Method

Popcorn Chicken

    Prepare Chicken

    Cut the boneless chicken breast into bite-sized pieces.

    Breading Station

    In a bowl, mix the flour, cornstarch, salt, black pepper, garlic powder, onion powder, and paprika. In another bowl, pour the buttermilk.

    Dredge Chicken

    Dip each piece of chicken into the buttermilk, then coat it with the flour mixture. Make sure each piece is evenly coated.

    Fry Chicken

    Heat vegetable oil in a deep frying pan over medium-high heat. Once hot, fry the chicken pieces in batches until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.

Adobo Dry Rub or Cholula Butter

    Prepare Adobo Rub

    For adobo dry rub, toss the fried chicken pieces in adobo seasoning until evenly coated.

    Prepare Cholula Butter

    For Cholula butter, melt the stick of unsalted butter in a small saucepan over medium heat. Once melted, stir in the Cholula hot sauce.

Pickled Jalapeños

    Prepare Pickling Liquid

    In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a simmer until sugar and salt dissolve.

    Pickle Jalapeños

    Slice the jalapeños and add them to the simmering pickling liquid. Remove from heat and let it cool before transferring to a jar. Refrigerate for at least 1 hour before serving.

Jalapeno Ranch

    Mix Jalapeno Ranch

    In a bowl, combine ranch dressing, diced jalapeño, and lime juice. Stir until well mixed.
