Preparing Tortilla Chips

Fry the Tortilla Chips
Heat vegetable oil in a large pot over medium-high heat. Once the oil is hot, cut corn tortillas into quarters and carefully add them to the oil in batches. Fry until golden and crispy, about 2-3 minutes per batch. Use a slotted spoon to remove chips and drain on paper towels. Sprinkle with salt while still warm.

Prepare the Queso
In a medium saucepan over low heat, combine Velveeta cheese, cream cheese, and milk. Stir until melted and smooth. Add diced green chilies and ground cumin, mixing well. Keep on low heat to maintain warmth.
Assembling Nachos

Layer the Nachos
On a large serving platter or baking sheet, spread a layer of tortilla chips. Drizzle warm queso over the chips, then sprinkle Chihuahua cheese evenly across. Add black beans, pickled jalapeños, and dollops of crema on top.

Finish with Salsas
Drizzle salsa roja and salsa fresca over the top of the nachos. Serve immediately while warm.
