Method

Preparing the Tacos

  1. 1

    Cook the Filling

In a skillet over medium heat, add ground beef or shredded chicken. Stir in cumin, chili powder, garlic powder, and salt. Cook until the meat is browned and fully cooked, about 8-10 minutes. Remove from heat.

  2. 2

    Prepare the Tortillas

Warm the corn tortillas in a dry skillet or microwave until pliable. This will make them easier to roll.

  3. 3

    Fill and Roll the Tacos

Place 2-3 tablespoons of the meat mixture on one end of a tortilla. Roll tightly and secure with a toothpick if necessary. Repeat with remaining tortillas.

Frying the Tacos

  1. 4

    Heat the Oil

In a large frying pan, heat vegetable oil over medium-high heat until hot, about 350°F (175°C).

  2. 5

    Fry the Tacos

Carefully place rolled tacos in the hot oil, frying them in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Making Salsa Fresca

  1. 6

    Chop Ingredients

Dice the Roma tomatoes and red onion. Chop the cilantro finely.

  2. 7

    Mix the Salsa

In a bowl, combine the diced tomatoes, red onion, cilantro, lime juice, and salt. Mix well and set aside.

Making Crema

  1. 8

    Combine Ingredients

In a small bowl, mix sour cream, lime juice, and garlic powder until smooth. Set aside.

Pickling Jalapeños

  1. 9

    Prepare the Jalapeños

Slice jalapeños into rings and place them in a jar.

  2. 10

    Mix Pickling Solution

In a saucepan, combine white vinegar, sugar, and salt. Bring to a simmer until sugar dissolves.

  3. 11

    Pickle the Jalapeños

Pour the hot vinegar mixture over the jalapeños in the jar. Let cool and refrigerate for at least 1 hour before serving.

Serving the Tacos

  1. 12

    Assemble the Plate

On a serving platter, arrange the crispy rolled tacos. Top with shredded lettuce, salsa verde, pico de gallo, pickled jalapeños, and a sprinkle of cotija cheese.

  2. 13

    Serve

Serve the tacos warm with crema on the side for dipping.
