Preparing the Tacos

Cook the Filling
In a skillet over medium heat, add ground beef or shredded chicken. Stir in cumin, chili powder, garlic powder, and salt. Cook until the meat is browned and fully cooked, about 8-10 minutes. Remove from heat.

Prepare the Tortillas
Warm the corn tortillas in a dry skillet or microwave until pliable. This will make them easier to roll.

Fill and Roll the Tacos
Place 2-3 tablespoons of the meat mixture on one end of a tortilla. Roll tightly and secure with a toothpick if necessary. Repeat with remaining tortillas.

Heat the Oil
In a large frying pan, heat vegetable oil over medium-high heat until hot, about 350°F (175°C).

Fry the Tacos
Carefully place rolled tacos in the hot oil, frying them in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Mix the Salsa
In a bowl, combine the diced tomatoes, red onion, cilantro, lime juice, and salt. Mix well and set aside.

In a small bowl, mix sour cream, lime juice, and garlic powder until smooth. Set aside.

Assemble the Plate
On a serving platter, arrange the crispy rolled tacos. Top with shredded lettuce, salsa verde, pico de gallo, pickled jalapeños, and a sprinkle of cotija cheese.
