Preparation

    Slice the Steak

    Thinly slice the ribeye steak against the grain into strips approximately 1/4 inch thick.

    Prepare Vegetables

    Slice the onion and green bell pepper into thin strips. Clean and slice the mushrooms.

Cooking

    Cook the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions, bell peppers, and mushrooms, and sauté until softened, about 5-7 minutes. Season with salt and black pepper. Remove from skillet and set aside.

    Cook the Steak

    In the same skillet, add the remaining tablespoon of olive oil. Increase heat to medium-high and add the sliced ribeye steak. Cook for 3-4 minutes, stirring occasionally, until browned and cooked to your liking.

    Combine Steak and Vegetables

    Add the cooked vegetables back into the skillet with the steak. Mix well to combine and heat for an additional 1-2 minutes.

    Add Cheese

    Lay the slices of white American cheese over the steak and vegetable mixture. Cover the skillet for about 1-2 minutes or until the cheese is melted.

Assembly

    Assemble the Cheesesteak

    Slice the hoagie rolls open lengthwise. Divide the steak and cheese mixture between the two rolls. Serve immediately.
