Wash and Prepare Apples
Thoroughly wash the fresh apples under cold water to remove any dirt or pesticides. Cut the apples into quarters, removing the stems and any bruised parts.

Combine Ingredients
In a large pot, combine the quartered apples, water, granulated sugar, cinnamon sticks, and lemon juice. If using, add the cloves and nutmeg for added flavor.

Cook the Mixture
Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer for 1-2 hours, stirring occasionally until the apples are soft and mushy.

Mash the Apples
Use a potato masher or a wooden spoon to mash the softened apples in the pot. This helps to release more juice from the apples.

Strain the Mixture
Place a fine mesh strainer or cheesecloth over a large bowl. Pour the apple mixture into the strainer, allowing the liquid to drain into the bowl. Use a spoon to press down on the solids to extract as much juice as possible.
