Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Ramekins

Grease four ramekins with butter and lightly dust them with flour. Tap out any excess flour.

Batter

  1. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the unsweetened chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth. Let it cool slightly.

  2. 4

    Mix Sugar and Eggs

In a separate mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and slightly thickened.

  3. 5

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, stirring constantly to combine.

  4. 6

    Add Dry Ingredients

Sift in the all-purpose flour and add the vanilla extract. Gently fold the batter until just combined; do not overmix.

Baking

  1. 7

    Fill Ramekins

Evenly distribute the batter into the prepared ramekins, filling each about 2/3 full.

  2. 8

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

Serving

  1. 9

    Cool and Serve

Remove the ramekins from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate, allowing the cake to slide out. Dust with powdered sugar and serve warm with a scoop of vanilla ice cream.
