Gather all ingredients and have them measured and ready to go. This is important as caramel can burn quickly once it starts cooking.

In a medium-sized, heavy-bottom saucepan, add the granulated sugar. Turn the heat to medium and allow the sugar to melt, stirring gently with a wooden spoon or heat-resistant spatula. Continue to stir until it is completely melted and turns a deep amber color, about 5-7 minutes.

Once the sugar has melted and reached the desired color, carefully add the unsalted butter. The mixture will bubble up vigorously, so be cautious. Stir until the butter is fully melted and incorporated into the caramel.

Slowly pour in the heavy cream while stirring continuously. The mixture will bubble up again, so take care. Continue stirring until the caramel is smooth and well combined.

Add a pinch of salt to enhance the flavor of the caramel. If using, stir in the vanilla extract at this point as well. Mix well until combined.
