Chimichanga Filling

Method

Prepare the Filling

    Cook the Chicken or Steak

    In a skillet over medium heat, cook the chicken or steak until fully cooked, about 6-8 minutes. Let it rest for a few minutes, then shred or chop into bite-sized pieces.

    Mix the Filling

    In a mixing bowl, combine the cooked chicken or steak, refried black beans, shredded cheese blend, and cooked rice. Mix well until all ingredients are evenly distributed.

Prepare the Queso Sauce

    Melt the Cheese

    In a saucepan over low heat, combine Velveeta cheese and milk. Stir continuously until melted and smooth.

    Add Flavorings

    Add the diced tomatoes with green chiles, chopped jalapeños, cumin, and salt to the melted cheese. Stir until well combined and heated through.

Assemble the Chimichangas

    Fill the Tortillas

    Lay a flour tortilla flat and spoon about 1/4 of the filling mixture onto the center of the tortilla. Fold the sides in and roll it up tightly.

    Repeat for All Tortillas

    Repeat the filling and rolling process for the remaining tortillas.

Fry the Chimichangas

    Heat the Oil

    In a deep frying pan, heat vegetable oil over medium-high heat to about 350°F (175°C).

    Fry the Chimichangas

    Carefully place the rolled chimichangas in the hot oil, frying them in batches if necessary. Fry until golden brown and crispy, about 3-4 minutes per side.

    Drain Excess Oil

    Remove the chimichangas from the oil and place them on a paper towel-lined plate to drain any excess oil.

Serve with Queso

    Place the fried chimichangas on a plate and generously pour the queso sauce over them. Serve immediately with optional sides of guacamole, sour cream, and pico de gallo.
