Preparing the Chicken

Marinate the Chicken
In a small bowl, mix olive oil, salt, black pepper, and garlic powder. Rub this mixture onto both sides of the chicken breasts. Let marinate for at least 30 minutes.

Preheat the grill over medium-high heat. Place the marinated chicken breasts on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove from the grill and let rest for 5 minutes before slicing.

In a large mixing bowl, combine the mixed greens, gorgonzola cheese crumbles, and cranberry walnuts. Toss gently to mix the ingredients evenly.

In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, olive oil, salt, and black pepper until well combined and emulsified.
