Method
Roasting the Beef

Preheat the Oven
Preheat your oven to 225°F (107°C). This low temperature helps in slow-roasting the Wagyu beef.

Prepare the Beef
Take the American Wagyu beef roast out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking.

Season the Beef
Rub the olive oil all over the beef roast. Then, combine salt, black pepper, garlic powder, and onion powder in a small bowl. Rub this seasoning mixture all over the beef to ensure it is evenly coated.

Roast the Beef
Place the seasoned Wagyu beef roast on a roasting rack in a baking dish. Insert a meat thermometer into the thickest part of the roast. Roast in the preheated oven until it reaches an internal temperature of 130°F (54°C) for medium-rare, which usually takes about 3 to 4 hours.

Rest the Beef
Once the desired temperature is reached, remove the beef from the oven and tent it with aluminum foil. Let it rest for at least 20 minutes before slicing. This allows the juices to redistribute.

Prepare the Vegetables
While the beef is resting, wash and chop the lettuce into bite-sized pieces. Slice the tomato and onion thinly.

After resting, slice the Wagyu beef roast thinly against the grain.

On a serving platter or individual plates, layer the sliced beef, followed by provolone cheese, lettuce, tomato, onion, and a generous spread of mayonnaise on each sandwich or plate.
