Roasting
Place the seasoned prime rib on a rack in a roasting pan. Roast in the preheated oven for 20 minutes to develop a nice crust. After 20 minutes, lower the oven temperature to 325°F (163°C) and continue to roast for about 1.5 to 2 hours, or until an internal thermometer reads 130°F (54°C) for medium-rare.

Resting the Meat
Once done, remove the prime rib from the oven and let it rest for at least 20 minutes before slicing. This allows the juices to redistribute.

Preparing the Au Jus
While the meat is resting, pour the beef broth into the roasting pan, scraping up any browned bits on the bottom. Heat over medium heat until warmed through, then strain if desired.

Serving
Slice the prime rib into 12oz portions, serve with au jus on the side and creamy horseradish sauce.
