    Prepare the Compound Butter

    In a bowl, combine the unsalted butter, fresh thyme leaves, minced garlic, and lemon zest. Mix well until all ingredients are fully incorporated. Transfer the mixture onto a piece of parchment paper, roll it into a log shape, and refrigerate until firm, about 30 minutes.

    Prepare the Salmon

    Preheat the oven to 400°F (200°C). Pat the Norwegian salmon fillets dry with paper towels. Drizzle olive oil over the fillets and season with salt and black pepper.

    Sear the Salmon

    In a large oven-safe skillet, heat a bit more olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down. Sear for about 4-5 minutes until the skin is crispy, then carefully flip the fillets.

    Roast in the Oven

    Transfer the skillet to the preheated oven and roast the salmon for an additional 6-8 minutes, or until the salmon is cooked through and flakes easily with a fork.

    Serve

    Remove the salmon from the oven, top with slices of the lemon-thyme compound butter, and let it melt over the salmon. Serve immediately with lemon wedges on the side.
