Cooking Instructions
- 1
Prepare the Prime Rib
Preheat your oven to 450°F (232°C). Pat the prime rib roast dry with paper towels. In a small bowl, combine the kosher salt, black pepper, garlic powder, olive oil, rosemary, and thyme to create a seasoning rub.
- 2
Season the Roast
Rub the seasoning mixture all over the prime rib roast, ensuring it is evenly coated.
- 3
Roast the Prime Rib
Place the roast on a rack in a roasting pan and roast in the preheated oven for 20 minutes. Then, reduce the oven temperature to 325°F (163°C) and continue roasting for about 1 hour 30 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.
- 4
Rest the Roast
Remove the roast from the oven and let it rest for at least 20 minutes before slicing. This allows the juices to redistribute.
- 5
Prepare the Au Jus
While the roast is resting, pour the drippings from the roasting pan into a saucepan. Add the beef broth and bring to a simmer over medium heat, scraping up any browned bits from the bottom of the pan.
- 6
Make the Horseradish Sauce
In a small bowl, mix prepared horseradish with sour cream and a pinch of salt to taste.
- 7
Serve
Slice the prime rib and serve with the au jus and horseradish sauce on the side.
