Cooking Instructions
- 1
Roast the Tomatoes
Preheat your oven to 200°C (400°F). Cut the fresh tomatoes in half and place them on a baking sheet. Drizzle with olive oil and season with salt. Roast in the oven for 25-30 minutes until tender and slightly charred.
- 2
Cook the Pasta
While the tomatoes are roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve a cup of pasta water before draining.
- 3
Prepare the Sauce
In a blender or food processor, combine the roasted tomatoes, garlic cloves (raw), and fresh basil leaves. Blend until smooth. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.
- 4
Combine Pasta and Sauce
In a large skillet over medium heat, add the pasta and tomato sauce. Mix well to combine and heat through. Adjust seasoning with salt and black pepper to taste.
- 5
Serve
Serve the pasta hot, topped with freshly grated Parmesan cheese and additional basil leaves if desired.
