Preparation and Cooking

    Prepare the Potatoes

    Wash and peel the Russet and sweet potatoes. Cut them into fries, about 1/4 to 1/2 inch thick.

    Soak the Fries

    Place the cut fries in a bowl of cold water for at least 30 minutes to remove excess starch. This helps them become crispier.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Russet Fries

    Remove the Russet fries from the water, pat them dry, and carefully add them to the hot oil in batches. Fry for about 5-7 minutes or until golden brown. Remove and drain on paper towels.

    Season the Russet Fries

    While still hot, sprinkle the Russet fries with salt, paprika, garlic powder, and black pepper.

    Fry the Sweet Potato Fries

    Repeat the frying process with the sweet potato fries, frying for about 3-5 minutes until they are crispy. Drain on paper towels.

    Season the Sweet Potato Fries

    Season the sweet potato fries with salt and any additional seasonings you prefer.

    Serve both types of fries together in a basket or platter, and enjoy hot!
