    Prepare the Filet

    Take the Angus beef filet out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking.

    Season the Filet

    Rub the filet with olive oil, then season with salt, black pepper, and fresh rosemary on all sides.

    Sear the Filet

    In a skillet over medium-high heat, add a bit of olive oil and sear the filet for about 4-5 minutes on each side for medium-rare, or until your desired doneness.

    In a small saucepan, heat the veal demi glace over low heat until warmed through.
