Sauté the Shrimp
In a large skillet, heat olive oil over medium-high heat. Add minced garlic and sauté for about 1 minute until fragrant. Add shrimp and cook until they turn pink, about 3-4 minutes. Season with salt and black pepper. Remove shrimp from the skillet and set aside.

Cook the Vegetables
In the same skillet, add sliced mushrooms and cook for about 5 minutes until they are tender. Add cherry tomatoes and spinach, cooking until the spinach wilts.

Prepare the Sauce
In a bowl, combine heavy cream and Dijon mustard. Mix well to create a smooth sauce.

Combine Ingredients
Return the cooked shrimp to the skillet with the vegetables. Pour the Dijon cream sauce over the mixture, stirring to coat everything evenly. Cook for an additional 2-3 minutes to heat through.

Taste and adjust seasoning if necessary. Serve hot, garnished with additional black pepper if desired.
