Prepare the Chicken
Preheat the oven to 200°C (400°F). Rub the chicken breasts with olive oil, salt, and black pepper. Place them on a baking sheet and roast in the oven for about 25-30 minutes or until cooked through.

Cook the Asparagus
While the chicken is roasting, bring a pot of salted water to a boil. Add the asparagus and cook for about 3-5 minutes until tender but still crisp. Drain and set aside.

Make the Hollandaise Sauce
In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water and whisk continuously until the mixture thickens. Slowly drizzle in the melted butter while whisking until smooth. Season with cayenne pepper.

Assemble the Dish
Once the chicken is cooked, place each breast on a plate. Top with asparagus and crab meat, then drizzle generously with hollandaise sauce. Serve immediately.
