Prepare the Pork
Rub the pork shoulder with olive oil, salt, and pepper. Place it in a slow cooker.

Cook the Pork
Pour the water and BBQ sauce over the pork. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Mix it with the remaining BBQ sauce in the slow cooker.

Prepare the Buns
Lightly toast the brioche buns until golden brown.

Assemble the Sandwich
On the bottom half of each bun, add a generous portion of the pulled pork, followed by a scoop of beer cheese, crispy onions, and sliced scallions. Top with the other half of the bun.

Serve the sandwiches warm with extra BBQ sauce on the side if desired.
