Prepare the Pork
In a slow cooker, add the pork shoulder, salt, pepper, and water. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork shoulder from the slow cooker and shred it using two forks. Mix in the BBQ sauce until well combined.

Prepare the Flatbreads
Preheat your oven to 400°F (200°C). Place the flatbreads on a baking sheet.

Assemble the Flatbreads
Top each flatbread with a portion of the pulled pork mixture, followed by shredded cheddar jack cheese and a few slices of red onion.

Bake
Bake in the preheated oven for about 10-12 minutes or until the cheese is melted and bubbly.

Remove from the oven, let cool slightly, then slice and serve warm.
