Burrito Preparation

    Cook the Rice

    In a saucepan, bring 2 cups of water to a boil. Add 1 cup of yellow rice, a pinch of salt, and a splash of olive oil. Stir and reduce heat to low. Cover and simmer for 20 minutes or until the water is absorbed.

    Prepare the Filling

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add shredded chicken and black beans. Season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally until heated through.

    Assemble the Burrito

    On a clean surface, lay out a flour tortilla. Spread a layer of yellow rice in the center, followed by the chicken and black bean mixture, cheddar cheese, lettuce, sour cream, and salsa.

    Wrap the Burrito

    Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom. Ensure that the ends are tucked in to prevent spillage.
