Method

Beef Stifado Preparation

    Searing the Beef

    In a large skillet, heat the olive oil over medium-high heat. Season the round steak with salt and black pepper. Sear the steak on all sides until browned, about 4-5 minutes per side. Remove the steak from the skillet and set aside.

    Cooking the Onions and Garlic

    In the same skillet, add the chopped onions and cook until they are translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

    Combining Ingredients for Stew

    In a slow cooker, add the seared beef, cooked onions and garlic, diced tomatoes, red wine, cinnamon stick, and bay leaves. Stir well to combine.

    Slow Cooking

    Cover the slow cooker and cook on low for 8 hours or on high for 4 hours, until the beef is tender and flavorful.

Preparing the Sides

    Cooking Green Beans with Bacon

    While the beef is cooking, trim the green beans and cut the bacon into small pieces. In a skillet over medium heat, cook the bacon until crispy. Remove the bacon, leaving the grease in the skillet. Add the green beans and sauté until tender, about 5-7 minutes. Stir in the crispy bacon before serving.

    Prepare rice or noodles according to package instructions. Set aside until ready to serve.

Salad and Final Touches

    Assembling the Spring Salad

    In a large bowl, combine mixed greens, sliced cucumber, halved cherry tomatoes, and shredded carrot. Toss with your choice of dressings.

    Once the beef is cooked, remove the cinnamon stick and bay leaves from the slow cooker. Serve the beef stifado over a bed of rice or noodles, topped with walnuts and feta cheese.
