Grand Marnier Cream Puffs

Incorporate Eggs
Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy. Stir in Grand Marnier.

Bake the Cream Puffs
Preheat the oven to 400°F (200°C). Drop tablespoon-sized amounts of dough onto a parchment-lined baking sheet. Bake for 20-25 minutes until golden brown. Let cool.

Prepare the Filling
Whip the heavy cream with powdered sugar until stiff peaks form. Cut the tops off the cooled puffs and fill them with the whipped cream. Replace the tops.

Prepare Puff Pastry
Preheat the oven to 400°F (200°C). Roll out the puff pastry sheets and cut them into rectangles. Place on a baking sheet and bake for 15-20 minutes until golden and puffed. Let cool.

Make Pastry Cream
In a saucepan, heat milk until just boiling. In a separate bowl, whisk together sugar, flour, cornstarch, and egg yolks. Gradually add hot milk to the egg mixture while whisking. Pour back into the saucepan and cook over medium heat until thickened. Stir in vanilla extract and let cool.

Assemble Napoleons
Layer pastry cream between two pieces of puff pastry. Top with another layer of pastry and dust with confectioners' sugar.

Prepare the Batter
Preheat the oven to 350°F (175°C). In a mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in flour, baking powder, and salt until just combined.

Add the Fruit
Fold in the mixed fresh fruits gently into the batter until evenly distributed.

Bake the Squares
Pour the batter into a greased 9x9 inch baking pan. Bake for 25-30 minutes or until golden brown and a toothpick inserted in the center comes out clean. Let cool before cutting into squares.

Dust with Powdered Sugar
Once cooled, dust the fruit squares with powdered sugar before serving.
