Shrimp Scampi

    Prepare the Shrimp

    In a large skillet over medium heat, add olive oil. Once hot, add minced garlic and sauté for about 1 minute until fragrant.

    Cook the Shrimp

    Add the jumbo shrimp to the skillet and season with red pepper flakes, salt, and black pepper. Cook for about 2-3 minutes until the shrimp start to turn pink.

    Add Wine and Lemon Juice

    Pour in the white wine and lemon juice, simmering for an additional 2-3 minutes until the shrimp are fully cooked and the sauce has slightly thickened.

Parsley Linguine

    Cook the Linguine

    In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and return to the pot.

    Add Parsley

    Toss the cooked linguine with chopped parsley and a bit of olive oil if desired, then set aside.

Roasted Vegetables

    Prepare the Vegetables

    Preheat the oven to 425°F (220°C). In a large bowl, combine chopped bell peppers, zucchini, and red onion.

    Season and Roast

    Drizzle the vegetables with olive oil, balsamic vinegar, salt, and black pepper. Toss to coat evenly, then spread on a baking sheet. Roast for 20-25 minutes until tender and slightly caramelized.

For Serving

    Serve with Rolls and Brownies

    On each plate, serve the shrimp scampi over a bed of parsley linguine, alongside roasted vegetables. Add a dinner roll and a brownie to each plate.
