Jambalaya Preparation

Cook the Chicken
In the same pot, add the cubed chicken breast and cook until browned on all sides. Remove and set aside with the sausage.

Add Tomatoes and Broth
Stir in the diced tomatoes, chicken broth, Creole seasoning, bay leaves, and return the sausage and chicken to the pot. Bring to a simmer.

Add Rice
Add the long-grain rice to the pot, stirring well to combine. Season with salt and pepper to taste.

Cook
Cover and reduce heat to low. Simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid. If using shrimp, add it during the last 5 minutes of cooking.

Rest and Serve
Remove from heat and let sit covered for 5 minutes. Fluff the jambalaya with a fork before serving.

Prepare Salad
In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and shredded carrot. Toss to mix evenly.

Dress Salad
Drizzle with your choice of dressing and toss to coat just before serving.

Prepare Dinner Rolls
Warm the dinner rolls in the oven if desired and serve with butter on the side.

Serve iced tea, coffee, and lemonade along with the dessert of your choice.
