Cooking Chicken Piccata

Prepare Chicken
Season the chicken breasts with salt and black pepper on both sides. Dredge each piece in flour, shaking off the excess.

Cook Chicken
In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Make Sauce
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the white wine and scrape the bottom of the skillet to deglaze. Allow it to simmer for about 2-3 minutes until reduced slightly.

Add Lemon and Capers
Stir in the lemon juice and capers. Return the chicken to the skillet and simmer for an additional 2-3 minutes, spooning the sauce over the chicken.

Finish with Parsley and Parmesan
Stir in the chopped parsley and sprinkle the grated Parmesan cheese over the chicken, allowing it to melt slightly.
Cooking Noodles and Serving

Cook Noodles
While the chicken is cooking, boil a large pot of salted water. Add the noodles and cook according to package instructions until al dente. Drain the noodles and set aside.

Serve
Plate the noodles and top with the chicken piccata and sauce. Serve with your choice of vegetable, garden salad with dressings, dinner rolls with butter, and dessert. Offer coffee, iced tea, or lemonade as a beverage.
