1. Cook Quinoa

Rinse the quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low and simmer for 15 minutes or until all the water is absorbed. Fluff with a fork and let it cool.

3. Mix Ingredients

In a large bowl, combine the cooled quinoa, chickpeas, bell peppers, avocado, cherry tomatoes, and red onion.

Top the salad with chopped cilantro and optionally sprinkle with feta cheese. Serve immediately or chill in the refrigerator for 30 minutes for enhanced flavors.
