Cooking Instructions
- 1
Prepare the Oven-Roasted Tomatoes
Preheat your oven to 400°F (200°C). Slice the Roma tomatoes in half and place them in a baking dish. Drizzle with olive oil and sprinkle with salt. Roast in the oven for 25-30 minutes until the tomatoes are soft and slightly caramelized.
- 2
Make the Tomato Sauce
While the tomatoes are roasting, prepare the overnight tomato sauce by blending roasted tomatoes (from the previous step), salt, and black pepper in a blender until smooth. Store in the refrigerator overnight to let the flavors meld.
- 3
Prepare the Pizza Dough
On a floured surface, roll out the pizza dough to your desired shape and thickness. Transfer to a baking sheet or pizza stone.
- 4
Assemble the Pizza
Spread a generous layer of the overnight tomato sauce over the rolled-out pizza dough. Tear the fresh mozzarella into pieces and scatter them evenly over the sauce. Add the roasted tomatoes on top.
- 5
Bake the Pizza
Bake in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbling.
- 6
Finish and Serve
Remove the pizza from the oven and drizzle with basil pesto. Top with fresh basil leaves and a sprinkle of black pepper. Slice and serve hot.
