    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thick fries, about 1/2 inch wide.

    Soak the Fries

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and pat dry.

    Fry the Potatoes

    In a large pot, heat the olive oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch.

    Season the Fries

    Remove the fries from the oil and drain on paper towels. While still hot, toss with grated Parmesan cheese, truffle salt, and sage leaves.

    Serve

    Serve immediately with spicy grown-up ketchup on the side.
