Main Dish Preparation

    Cook the Quinoa

    Rinse 1 cup of quinoa under cold water. In a pot, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce to a simmer and cover. Cook for about 15 minutes until the water is absorbed and the quinoa is fluffy. Set aside.

    Sauté Spinach and Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic (2 cloves) and sauté for 30 seconds until fragrant. Add 2 cups of spinach, diced red bell pepper, and halved cherry tomatoes. Cook for about 5-7 minutes until the vegetables are tender.

    Combine Ingredients

    In a large mixing bowl, combine the cooked quinoa, sautéed vegetables, 1 cup of chickpeas, 1 teaspoon of cumin, 1 teaspoon of salt, and 1 teaspoon of pepper. Drizzle with 2 tablespoons of lemon juice and mix well.

    Prepare Vegetables

    Slice 1 medium cucumber and 1 large carrot into sticks or rounds for dipping.

    Serve with Hummus

    Place 1 cup of hummus in a small container for dipping the cucumber and carrot sticks.

    Make Chocolate Banana Bites

    In a bowl, mash 2 medium bananas until smooth. Stir in 4 tablespoons of almond butter, 2 tablespoons of cocoa powder, and 2 tablespoons of maple syrup. Mix until well combined.

    Spoon the mixture into small molds or onto a baking sheet lined with parchment paper. Freeze for 30 minutes until firm. Cut into bite-sized pieces and serve as a dessert.
