Preparing the Dough

Make the Pastry Dough
In a large mixing bowl, combine all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Add Wet Ingredients
Stir in the egg yolk and add cold water gradually until the dough begins to come together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Making the Fillings

Prepare Cream Cheese Filling
In a medium bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined.

Prepare Fruit Filling
In a small bowl, mix the fruit preserves until smooth.

Prepare Chocolate Filling
Place chocolate chips in a heatproof bowl and melt in the microwave or over a double boiler until smooth.
Assembling the Pastries

Roll Out the Dough
Preheat your oven to 375°F (190°C). On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut into desired shapes (squares, circles, etc.).

Place a spoonful of desired filling in the center of each cut-out dough piece. Fold over and seal the edges using a fork or by pinching them together.

Bake the Pastries
Place the pastries on a baking sheet lined with parchment paper and bake in the preheated oven for 20-25 minutes or until golden brown.

Remove from oven and let cool on a wire rack. Dust with powdered sugar before serving, if desired.
