    Rinse the rice

    In a bowl, rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.

    Prepare the vegetables

    Chop the mixed vegetables, onion, and tomato into small pieces. Cut the paneer into cubes.

    Prepare the spices

    Measure out the cumin seeds, turmeric powder, garam masala, salt, and black pepper.

    Heat the oil

    In a large pot, heat the vegetable oil or ghee over medium heat.

    Sauté the spices

    Add cumin seeds to the pot. When they start to sizzle, add the chopped onion and sauté until translucent.

    Add ginger-garlic paste

    Stir in the ginger-garlic paste and chopped green chili, cooking for another 1-2 minutes.

    Add tomatoes and spices

    Add the chopped tomato, turmeric powder, garam masala, salt, and black pepper. Cook until the tomato softens.

    Add mixed vegetables

    Add the mixed vegetables to the pot and stir well. Cook for about 5 minutes until they soften.

    Add paneer

    Gently fold in the paneer cubes and cook for another 2-3 minutes.

    Add rice and water

    Add the soaked and drained basmati rice to the pot, followed by water. Stir gently to combine.

    Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 15-20 minutes or until the rice is cooked and water is absorbed.

    Once done, remove the pot from heat. Let it sit covered for 5 minutes, then fluff the rice with a fork. Garnish with chopped cilantro before serving.
