Prepare the Vegetables
Chop the mixed vegetables into small, uniform pieces. You can use a mix of carrots, bell peppers, zucchini, and peas.

Add Mixed Vegetables
Add the chopped mixed vegetables to the skillet. Stir well and cook for 3-5 minutes until they are slightly tender.

Add soy sauce, salt, and black pepper to the vegetables. Stir to combine and cook for another 2 minutes. Remove from heat and let cool.

Place a spring roll wrapper on a clean surface. Spoon 2 tablespoons of the vegetable mixture onto the center of the wrapper. Fold the sides over the filling and roll tightly to form a parcel.

Repeat the wrapping process for the remaining vegetable mixture and wrappers.

Gather fresh mint leaves, coriander leaves, chopped green chili, lemon juice, salt, and water.

In a blender, combine mint leaves, coriander leaves, green chili, lemon juice, salt, and water. Blend until smooth, adjusting the water to achieve the desired consistency.
