To make the Masala Chai Syrup

    Prepare the spice mixture

    In a medium saucepan, combine 1 cup of water, 1 cup of sugar, black tea leaves, grated ginger, cinnamon stick, crushed cardamom pods, cloves, and black peppercorns.

    Cook the syrup

    Bring the mixture to a boil over medium heat, stirring occasionally until the sugar has completely dissolved.

    Simmer the syrup

    Reduce the heat to low and let the mixture simmer for about 15-20 minutes to allow the flavors to infuse.

    Strain the syrup

    Remove the saucepan from the heat and strain the syrup through a fine mesh sieve into a clean container. Let it cool before using.

To make the Masala Chai Sour

    Combine ingredients

    In a cocktail shaker, combine 2 oz of the prepared Masala Chai Syrup, 1 oz of fresh lemon juice, 2 oz of bourbon or rye whiskey, and 1 egg white.

    Shake the mixture vigorously without ice for about 15 seconds to create froth from the egg white.

    Shake with ice

    Add a cup of ice cubes to the shaker and shake again for an additional 15-20 seconds until well chilled.

    Strain the mixture into a chilled cocktail glass. Garnish with a sprinkle of ground cinnamon on top.
