Mousse Preparation

Prepare the Gelatin
In a small bowl, sprinkle the gelatin powder over the water and let it sit for about 5 minutes until it blooms.

Heat the Gelatin
Once bloomed, heat the gelatin mixture gently in the microwave or on a stovetop until dissolved. Do not let it boil. Set aside to cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Gradually add the sugar while continuing to whip until stiff peaks form.

Combine Ingredients
In a large mixing bowl, combine the mango pulp, cardamom powder, and vanilla extract. Mix well.

Incorporate Gelatin
Add the slightly cooled gelatin mixture to the mango mixture and stir to combine.

Fold in Cream
Gently fold the whipped cream into the mango mixture until well combined. Be careful not to deflate the whipped cream.

Chill the Mousse
Pour the mousse mixture into serving glasses or bowls. Cover with plastic wrap and refrigerate for at least 4 hours or until set.

Once the mousse has set, remove from the refrigerator. Top each mousse with sliced almonds and place a mint leaf on top for garnish.
