    Sauté the Aromatics

    In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes. Stir in the minced garlic and grated ginger, and cook for another 2 minutes until fragrant.

    Add the Lamb

    Increase the heat to medium-high and add the lamb cubes to the pot. Sear the lamb on all sides until browned, about 5-8 minutes.

    Incorporate the Spices

    Add the cumin seeds, coriander powder, turmeric powder, garam masala, chili powder, and salt to the pot. Stir well to coat the lamb and cook for another 2-3 minutes to toast the spices.

    Add Tomato and Coconut

    Pour in the tomato puree and coconut milk, stirring to combine. Bring the mixture to a gentle simmer.

    Simmer the Curry

    Reduce the heat to low and cover the pot. Let the curry simmer for about 1.5 to 2 hours, or until the lamb is tender, stirring occasionally.

    Once the lamb is tender, adjust seasoning with salt if necessary. Serve hot, garnished with fresh cilantro over rice or with naan bread.
