Method

Preparation of the Base

  1. 1

    Boil the Milk

In a large saucepan, bring 1 litre of full-fat milk to a boil over medium heat, stirring occasionally to prevent it from sticking to the bottom.

  2. 2

    Add Sugar and Condensed Milk

Once the milk comes to a boil, add 3 tablespoons of sugar and 1 cup of condensed milk. Stir well until the sugar dissolves completely.

  3. 3

    Thicken the Mixture

Reduce the heat to low and let the mixture simmer for about 15-20 minutes, stirring frequently until it thickens slightly.

  4. 4

    Mix Cornstarch

In a small bowl, mix 2 tablespoons of cornstarch with a little water to form a slurry. Add this slurry to the simmering milk mixture and stir continuously for another 5 minutes until it thickens.

  5. 5

    Add Flavorings

Stir in 1 teaspoon of cardamom powder and a pinch of saffron strands. If desired, add 1 teaspoon of rose water for additional flavor.

Final Preparation

  1. 6

    Add Chopped Nuts

Remove the mixture from heat and allow it to cool slightly. Stir in 1 cup of chopped nuts (pistachios and almonds).

  2. 7

    Pour into Molds

Pour the mixture into kulfi molds or any small cups. Cover them with lids or plastic wrap.

  3. 8

    Freeze

Place the molds in the freezer for at least 6-8 hours, or until the kulfi is completely frozen.

  4. 9

    Serve

To serve, run the molds under warm water for a few seconds to loosen the kulfi, then remove from the molds and enjoy!
