    Grate the Carrots

    Wash and peel the carrots. Grate them using a box grater or a food processor until you have about 4 cups of grated carrots.

    Measure Ingredients

    Gather all the ingredients, including sugar, ghee, milk, cardamom powder, chopped nuts, and raisins.

Cooking

    Heat Ghee

    In a large heavy-bottomed pan, heat the ghee over medium heat until melted.

    Cook Carrots

    Add the grated carrots to the melted ghee and sauté for about 10 minutes, stirring occasionally, until the carrots are slightly soft.

    Add Milk

    Pour in the milk and bring it to a boil. Reduce the heat to low and let it simmer, stirring frequently for about 15-20 minutes until the milk is absorbed.

    Add Sugar and Cardamom

    Once the milk is absorbed, add the sugar and cardamom powder. Mix well and continue to cook for another 10 minutes, stirring constantly until the halwa thickens.

    Add Nuts and Raisins

    Stir in the chopped nuts and raisins, cooking for an additional 5 minutes until everything is well combined and the halwa has a rich consistency.

Serving

    Remove the halwa from heat and let it cool slightly. Serve warm in bowls, garnished with additional nuts if desired.
