Prepare the Okra
Wash the okra thoroughly under running water. Pat dry with a clean kitchen towel. Trim the ends and slice the okra into thin rounds, about 0.5 cm thick.

Mix the Spices
In a small bowl, combine turmeric powder, red chili powder, coriander powder, salt, and black pepper. Adjust the seasoning according to your taste.

Heat the Oil
In a large frying pan or skillet, heat the oil over medium-high heat until it shimmers.

Fry the Okra
Add the sliced okra to the hot oil in a single layer. Sprinkle the spice mix evenly over the okra. Stir-fry for about 8-10 minutes, or until the okra becomes crispy and golden brown, stirring occasionally to ensure even cooking.

Add Tamarind Sauce
Once the okra is crispy, reduce the heat to low and add the tamarind paste. Stir well to coat the okra evenly with the sauce. Cook for an additional 2-3 minutes to allow the flavors to meld.
