Poppadums

Fry the Poppadums
Heat the oil in a deep frying pan over medium heat. Fry the poppadums one at a time until they puff up and become golden brown, about 30 seconds each. Remove and drain on paper towels.

Prepare the Chutney
In a food processor, combine the fresh coriander, mint leaves, green chili, lemon juice, and salt. Blend until smooth. Adjust seasoning if necessary and set aside.

Knead the Dough
Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Cook the Rice
Rinse the basmati rice under cold water until the water runs clear. In a pot, combine the rinsed rice, water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes until the water is absorbed and the rice is fluffy.
