Method
Roasting the Pork Loin
Prepare the Pork Loin
Preheat your oven to 375°F (190°C). Pat the pork loin dry with paper towels. Rub the pork with olive oil, ensuring it is evenly coated.
Season the Pork
Mince the garlic and mix it with salt, black pepper, and chopped fresh rosemary. Rub this mixture all over the pork loin.
Roast the Pork
Place the pork loin on a roasting pan and insert it into the preheated oven. Roast for about 1.5 hours or until the internal temperature reaches 145°F (63°C).
Rest the Pork
Once done, remove the pork from the oven and let it rest for 15 minutes before slicing.
Making the Apricot Chutney
Chop the Onion
Finely chop the medium onion and set aside.
Combine Ingredients
In a medium saucepan, combine the dried apricots, chopped onion, apple cider vinegar, brown sugar, ginger, cinnamon, salt, and black pepper.
Cook the Chutney
Bring the mixture to a boil over medium heat. Reduce the heat and let it simmer for about 20-25 minutes, stirring occasionally, until the apricots are soft and the mixture thickens.
Cool the Chutney
Remove from heat and allow the chutney to cool slightly before serving.
