Method

Preparing the Skewers

    Prepare the Filet Mignon

    Cut the filet mignon into 1-inch cubes and season them with salt and black pepper. Set aside.

    Prepare the Bacon

    Cut each slice of thick-cut bacon in half. Pre-cook the bacon in a skillet over medium heat until slightly crispy but still flexible, about 5-7 minutes. Drain on paper towels.

    Assemble the Skewers

    On each skewer, thread a piece of filet mignon, followed by a cherry tomato, a piece of bacon, and a handful of spring greens. Repeat until the skewer is filled, leaving space at the ends for handling.

Making the Dressing

    Combine Ingredients

    In a bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, salt, and black pepper until well combined and emulsified.

    Taste and Adjust

    Taste the dressing and adjust seasoning as needed. If desired, add more honey for sweetness or vinegar for acidity.

Cooking the Skewers

    Grill the Skewers

    Preheat a grill or grill pan over medium-high heat. Place the assembled skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the filet mignon is cooked to your desired level of doneness.

    Once cooked, remove the skewers from the grill and let rest for a few minutes. Serve warm with a generous drizzle of Bay's Tribute dressing over the top.
