Slice the Onions

Thinly slice the onions and set them aside.

Mince the Garlic

Mince the garlic cloves and set them aside.

Cook the Onions

In a large pot, heat the olive oil and butter over medium heat. Add the sliced onions and cook, stirring frequently, for about 30-40 minutes, until they are caramelized and golden brown.

Add Garlic and Herbs

Add the minced garlic, thyme, salt, and black pepper to the pot. Cook for an additional 2 minutes until the garlic is fragrant.

Deglaze the Pot

Pour in the dry white wine and scrape the bottom of the pot to deglaze, letting it simmer for 5 minutes.

Stir in the beef broth, water, and bay leaf. Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes.
