Preparation

    Prepare the Roast

    Remove the prime rib roast from the refrigerator and let it sit at room temperature for about 1 hour before cooking. This helps it cook evenly.

    Season the Roast

    In a small bowl, mix together the kosher salt, black pepper, garlic powder, and fresh rosemary. Rub the mixture all over the prime rib roast, ensuring it is evenly coated.

    Optional Cajun Spice

    If using Cajun spices, add the Cajun seasoning to the spice mixture and rub it over the roast along with the other spices.

Cooking the Roast

    Preheat the Oven

    Preheat your oven to 225°F (107°C). This low temperature will allow for slow roasting.

    Prepare the Roast for Cooking

    Drizzle the olive oil over the seasoned prime rib roast and rub it in to create a nice crust.

    Roast the Prime Rib

    Place the roast in a roasting pan, bone side down. Insert a meat thermometer into the thickest part of the roast, avoiding the bone. Roast in the preheated oven until the internal temperature reaches 130°F (54°C) for medium-rare, approximately 3 to 4 hours.

    Once the desired temperature is reached, remove the roast from the oven and cover it loosely with aluminum foil. Let it rest for at least 20-30 minutes before slicing. This helps the juices redistribute.
