Preparing the Prime Rib

Season the Prime Rib
In a small bowl, mix together salt, black pepper, and garlic powder. Rub the mixture all over the prime rib roast, ensuring it’s evenly coated. Drizzle with olive oil and rub it in.

Roast the Prime Rib
Preheat your oven to 450°F (232°C). Place the seasoned prime rib in a roasting pan, bone side down. Roast for 20 minutes, then reduce the temperature to 325°F (163°C) and continue cooking until the internal temperature reaches 130°F (54°C) for medium-rare, about 1.5 to 2 hours.

Rest the Meat
Once cooked, remove the prime rib from the oven and cover it loosely with aluminum foil. Let it rest for at least 20 minutes before slicing.
Preparing the Horseradish Cream

Mix the Ingredients
In a bowl, combine sour cream, prepared horseradish, Dijon mustard, lemon juice, salt, and black pepper. Mix until smooth and well combined. Adjust seasoning to taste if necessary.

Chill the Cream
Cover the horseradish cream and refrigerate for at least 30 minutes to allow flavors to meld.
Assembling the Dish

Slice the Prime Rib
After resting, slice the prime rib into thin slices using a sharp knife.

Plate the Dish
On a serving platter, arrange slices of prime rib. Top with slices of cheddar cheese and a handful of fresh arugula. Serve with the horseradish cream on the side for dipping.
